Classic Method Stabilization.
The oldest method of stabilization consists in submitting the wine to low temperatures during a period of time sufficient for the crystallization of the potassium (K + ) bitartarate crystals to occur. Trativi chillers are specifically built for an efficient decrease in the temperature of the wine to stabilize. It has an energy recovery system that allows for a reduction in energy costs through the process. The use of isotherm deposits is recommended in order to maintain the wine at low temperature and to reduce the energy needed for crystallization.
Contact Method Stabilization.
This method consists in submitting the wine to negative temperatures where potassium (K + ) bitartarate crystals are added to promote crystallization. The crystals should be agitated in the wine periodically. This method has a lower crystallization time when comparing with the classic stabilization method. Trativi chillers are specifically built for an efficient decrease in the temperature of the wine to stabilize. It has an energy recovery system that allows for a reduction in energy costs through the process. The use of isotherm deposits with agitator is recommended in order to maintain the wine at low temperature, promote crystal agitation and to reduce the energy needed for crystallization.
Continuous Bitartarate System (CBS).
The continuous bitartarate system (CBS) designed by Trativi is original and safe. It works at a constant treatment flow which allows the user to make a rigorous planning of the treatment and winery tasks. With CBS the wine is gently treated because it never reaches the freezing point, maintaining the color, structure and tanins of red wines. Trativi’s CBS design has various energy recovery systems and a system that optimizes the crystal separation through all process, thus reducing considerably the operational costs.
